After the second World War came an intense food shortage in Japan, a turning point in the history of noodles. Ramen were perfect and greatly helped in Japan, they were affordable and a great source of noodle calories. There are thousands of different variations of ramen. Each town has its own style ramen’s soup. Popular ramen are Hokkaido’s Miso Raman, Fukuoka’s Hakata raman and Kyushu’s Tonkotsu ramen. Tonkotsu is one of the most popular flavours of ramen in Japan and it’s the most time-consuming and difficult to make all the soups. Ajisen Ramen is Tonkotsu based soup.
